Vegan Deliciousness: Ben's Cauliflower Curry

This cauliflower curry is a simple, vegan dish that uses the whole cauliflower (including the stems and leaves) so there's no waste. It's easy and addictive!


Everyone loves a good curry, but no one is crazy about waste. That's why every part of the cauliflower is used. It makes for a spicy, flavourful, and comforting vegan meal that's easy to throw together and even easier to enjoy!

Ben's Cauliflower Curry


Ingredients


To make this delicious recipe, you will need:

  • 1 whole cauliflower, with stems and leaves

  • 1 tsp coriander seeds

  • 1 tsp cardamom seeds

  • 3 - 4 curry leaves

  • 1 tbsp ginger

  • 3 garlic cloves

  • 2 yellow onions

  • 1 chilli

  • 1½ tsp salt

  • 1 tbsp oil

  • 250ml of oat cream

  • 1 can of diced tomatoes

  • Juice of ½ lime


Method


  1. Chop cauliflower, garlic, ginger, and onions

  2. Heat a wok over high heat and add coriander, cardamom, and curry leaves. Toast for 2 minutes or until brown.

  3. Remove from the work and grind to a powder using a mortar and pestle or spice grinder.

  4. Return the spices to the wok on high heat with some oil. Cook for 1 minute.

  5. Add ginger, garlic, onions, chilli, and salt. Stir fry for 5 minutes.

  6. Add the cauliflower and toss with other ingredients so it's well-coated. Cook for 7-10 minutes so it starts to soften.

  7. Add the tomatoes and cook for 3-5 minutes or until they start to break down.

  8. Pour in the oat milk and cook over medium heat until the cauliflower has softened and the sauce has reduced.

  9. Squeeze the lime juice over the curry and serve with rice or naan bread.
