How is the ingredient produced?


For the development of vegan casein, GMO (genetically modified organisms) systems are used. We start by understanding the complexity of casein - a milk protein - and separating it into four types of casein (β-casein, κ-casein, α-S1-casein, and α-S2-casein). The next step involves copying the DNA structure of each casein into a yeast.


During a process of precision fermentation, the yeast is grown at the perfect temperature and is fed with peas, sugar, and vitamins. Once the feeding stops, the product is extracted as a powder. Because all traces of the yeast are removed at the end of the production process, the end-product - Fooditive's Vegan Casein - is GMO-free.


After production, it is ready to be used in a variety of food and beverage applications.
