One of the tastiest summer food for me is Greek Zucchini Pie or Kolokithopita.
It is a simple combination of zucchini, yellow onions, carrots, herbs like dill, parsley, and mint, eggs & feta cheese, wrapped in phyllo dough, for a delicious vegetarian meal to be consumed during the whole day.
Want a vegan version? Simply skip the cheese and replace eggs with some chia seeds to keep the same texture. The result will not disappoint you!
Start with chopping the onions and saute them. Grate the zucchini and carrot, and combine them with the onions. Mix the eggs (or chia seeds) with the feta cheese (you can even use mushrooms for a vegan version, make sure you saute them first!). Season with some salt and pepper. Mix all ingredients together and add your chopped herbs.
And what about the phyllo dough?
In a casserole dish start by adding 5-6 layers of phyllo on the bottom – make sure you brush each one with olive oil to keep them together. This is the secret for your pita to be crispy and delicious.
Pour over the mixture you prepared before and add on top 5-6 more layers of phyllo dough.
Before you bake it, make sure you make some cuts on the top of the dough so to ensure smooth baking. Bake until golden brown and enjoy!
